  • 1/2 cup unsalted butter, cut into pieces
  • 3/4 cup granulated sugar
  • 1/2 cup fresh lemon juice (about 3 large lemons)
  • 2 tablespoons lemon zest
  • 4 large eggs (room temperature)

  1. In a large microwave-safe bowl, whisk together the butter, sugar, lemon juice, and lemon zest. Microwave on high for 1 minute. Whisk until the butter is melted and the mixture is well combined.
  2. In another bowl, beat the eggs until well combined. Slowly pour the eggs into the lemon mixture while whisking to combine.
  3. Microwave the mixture for 2 minutes, then whisk well. Microwave in 1-minute intervals, whisking well between each, until the mixture is thick enough to coat the back of a spoon (about 5-6 minutes total).
  4. Remove the bowl from the microwave and let the curd cool for a few minutes.
  5. Transfer the curd to an airtight container and place in the refrigerator to cool completely. The curd will thicken as it cools.

Additional Notes:

  • For a smoother curd, strain the mixture through a fine-mesh sieve before transferring to the container.
  • If the lemon curd is too tart, add 1-2 tablespoons of sugar to taste.
  • This Microwave Lemon Curd can be stored in the refrigerator for up to 2 weeks.
