Bananas Foster Cake is a delicious dessert that is sure to satisfy your sweet tooth.   • 3 ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup mashed bananas
  • For the Banana Foster Topping:

  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/4 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 2 ripe bananas, sliced
  • 1/4 cup dark rum

  • Directions:

    1. Preheat your oven to 350°F (177°C). Grease and flour a 9-inch round cake pan.
    2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside the dry ingredients.
    3. In a large mixing bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
    4. Add eggs one at a time, beating well after each addition until the mixture is smooth.
    5. Mix in the vanilla extract, ground cinnamon, ground ginger, and ground nutmeg into the wet mixture.
    6. Gradually stir in the dry ingredients and mashed bananas until just blended.
    7. Pour the batter into the prepared cake pan and bake it for about 30-35 minutes, or until a toothpick or cake tester comes out clean.
    8. While the cake is baking, prepare the Bananas Foster topping. In a large skillet over medium-high heat, melt the butter. Add the brown sugar and salt, and cook until the sugar is dissolved and the mixture begins to bubble.
    9. Stir in the heavy cream and vanilla extract and remove the skillet from the heat.
    10. Add the sliced bananas and rum, and return the skillet to the heat. Cook, stirring occasionally, until the bananas are softened and the mixture has thickened.
    11. When the cake has finished baking, remove it from the oven, and let it cool for a few minutes. Use a fork or skewer to poke small holes all over the top of the cake. Pour the hot Bananas Foster mixture over the cake, making sure to spread it evenly over the surface.

    Additional notes:

    This Bananas Foster Cake is best served while still warm, but it can also be stored in a sealed container in the refrigerator for up to 3 days. Just reheat it in the oven or the microwave before serving. You could also leave out the rum for a non-alcoholic version of this dessert.
