Ingredients:

  • 6 medium apples
  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/4 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup chopped nuts (walnuts, pecans, or almonds)

Instructions:

  1. Wash and dry the apples. Insert a wooden stick into the stem end of each apple.

  3. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the mixture becomes a dark caramel color and reaches 240 degrees F on a candy thermometer.

  5. Dip each apple into the caramel, turning to coat evenly, and then roll in the chopped nuts.
  6. Place the apples on a sheet of wax paper and let cool completely before serving.
