Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 4 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 3/4 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/8 teaspoon cinnamon
  • 1 tablespoon unsalted butter
  • 1 egg yolk
  • 2 tablespoons of milk
  • 1 tablespoon of sugar

Instructions:

  1. Preheat your oven to 375°F (190°C). In a large mixing bowl, whisk together flour and salt. Cut in the unsalted butter until the mixture has clumps the size of small peas. Add 3 tablespoons of ice-cold water, one tablespoon at a time, until the dough is cohesive. Wrap it in plastic and let it chill in the refrigerator for at least 30 minutes.
  2. In a separate bowl, combine the blueberries, lemon juice, granulated sugar, cornstarch, and cinnamon. Mix thoroughly.
  3. Roll out the dough on a lightly floured surface. Place it in a 9-inch pie dish and trim the edges. Brush the egg yolk over the top of the crust.
  4. Pour the blueberry mixture into the crust and dot the remaining butter over the top of the filling.
  5. Use the remaining dough to create a lattice design or cut strips to place on top of the filling. Brush with milk and sprinkle with sugar.
  6. Bake for 50-60 minutes or until the crust is golden brown. Let it cool for at least 15-20 minutes before serving.
