  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • 1 1/2 cups whole milk
  • 1/4 cup brewed espresso, cooled
  • 1/2 cup mascarpone cheese, room temperature
  • 1/2 cup heavy cream, whipped to soft peaks
  • 1/4 cup powdered sugar
  • 1/4 cup cocoa powder, for dusting


  1. Preheat your oven to 350 degrees F. Grease two 9-inch cake pans and line with parchment paper.
  2. In a medium bowl, whisk together the cake flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the unsalted butter and sugar until light and fluffy.
  4. Add the eggs and egg yolks, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Add half of the flour mixture to the wet ingredients, followed by the whole milk. Mix well, then add the remaining flour mixture and mix until just combined.
  6. Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Allow the cakes to cool completely before removing them from the pans.
  8. In a small bowl, whisk together the cooled brewed espresso and mascarpone cheese until smooth.
  9. In a separate mixing bowl, beat the heavy cream and powdered sugar together until soft peaks form.
  10. To assemble the cake, place one cake layer on a cake stand or plate. Spread half of the espresso mascarpone mixture over the top. Carefully place the second cake layer on top and spread the remaining mascarpone mixture over the top.
  11. Top the cake with the whipped cream and dust with cocoa powder. Chill for at least 30 minutes before slicing and serving.
