Ingredients:
- 2 medium-sized courgettes, diced
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 cup apple cider vinegar
- 1/2 cup honey
- 1 teaspoon mustard seeds
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- In a large saucepan, combine the courgettes, onion, red and green peppers, apple cider vinegar, honey, mustard seeds, turmeric, cinnamon, and salt.
- Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer for 20-25 minutes, stirring occasionally, until the vegetables are soft and the liquid has thickened.
- Remove the saucepan from the heat and let the relish cool for at least 10 minutes.
- Transfer the relish to a jar or airtight container and store it in the fridge for up to 2 weeks.
