  • 2 medium-sized courgettes, diced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup apple cider vinegar
  • 1/2 cup honey
  • 1 teaspoon mustard seeds
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt


  1. In a large saucepan, combine the courgettes, onion, red and green peppers, apple cider vinegar, honey, mustard seeds, turmeric, cinnamon, and salt.
  2. Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer for 20-25 minutes, stirring occasionally, until the vegetables are soft and the liquid has thickened.
  3. Remove the saucepan from the heat and let the relish cool for at least 10 minutes.
  4. Transfer the relish to a jar or airtight container and store it in the fridge for up to 2 weeks.

  • You can adjust the sweetness of the relish by adding more or less honey to taste.
