Ingredients
- 500g runner beans, trimmed and sliced
- 200g cherry tomatoes, halved
- 1 small red onion, sliced
- 1 red bell pepper, sliced
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of fresh parsley, chopped
For the Dressing
- 3 tbsp of olive oil
- 2 tbsp of red wine vinegar
- 1 tbsp of honey
- Salt and pepper to taste
Method
- In a pot of boiling salted water, cook the runner beans for 3-4 minutes or until tender-crisp.
- Drain the beans and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked runner beans, cherry tomatoes, red onion, bell pepper, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
