Runner Bean Salad

Ingredients

  • 500g runner beans, trimmed and sliced
  • 200g cherry tomatoes, halved
  • 1 small red onion, sliced
  • 1 red bell pepper, sliced
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of fresh parsley, chopped

For the Dressing

  • 3 tbsp of olive oil
  • 2 tbsp of red wine vinegar
  • 1 tbsp of honey
  • Salt and pepper to taste

Method

  1. In a pot of boiling salted water, cook the runner beans for 3-4 minutes or until tender-crisp.
  2. Drain the beans and rinse under cold water to stop the cooking process.
  3. In a large bowl, combine the cooked runner beans, cherry tomatoes, red onion, bell pepper, feta cheese, and parsley.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.
