Ultimate Twice-Baked Potatoes

These creamy, cheesy and bacon-filled twice-baked potatoes are perfect as a side dish or can be served as a main course. This recipe yields 6 servings and is a great source of carbohydrates and proteins.


  • 6 large baking potatoes, washed and dried
  • 6 strips of bacon, cooked and crumbled
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/4 cup butter, softened
  • 1 1/2 cups shredded cheddar cheese
  • 2 green onions, sliced
  • Salt and pepper to taste


  1. Preheat the oven to 400°F (200°C).
  2. Pierce the potatoes with a fork and bake for 45-60 minutes or until soft and tender.
  3. Cut off the top part of each potato and scoop out the flesh into a bowl. Leave about a 1/4 inch edge around the skin to keep the potato intact.
  4. Mash the potato flesh with a potato masher or a fork. Add the butter, sour cream, milk, half of the bacon, half of the cheese, salt and pepper. Combine well.
  5. Scoop the mixture back into the potato skins and top with remaining cheese and bacon.
  6. Place the potatoes back in the oven and bake for an additional 15-20 minutes or until the cheese melts and the tops are golden brown.
  7. Top each potato with sliced green onions and serve hot.

Additional Notes:

  • Twice-baked potatoes can be prepared up to a day in advance and refrigerated. Simply reheat the potatoes in the oven at 350°F (180°C) for 20-30 minutes before serving.
  • This recipe can also be made healthier by substituting bacon with turkey bacon and using low-fat cheese and sour cream.
